Okay, tell me if this sounds familiar…You take time once a week to go to he grocery store (or have groceries delivered) you buy all kinds of different fresh fruits and vegetables because…if you have them readily available in the house YOU and EVERYONE you live with will grab for the good stuff first…Right?
Then a few days later your fruits are turning faster than they are getting eaten. Urgh!
I get it, I live it too! So, what do you do with all those berries?
~ Make a sweet treat to save your berries from being thrown away and make your family and friends smile.
I also bought a flat of peaches that we ate, but just couldn’t get through before they got mushy. What to do?
Make a Galette!!!!
I don’t know about you but I typically have a couple pre-made pie crusts I keep frozen. Using pre-made makes this a fast dessert to throw together.
Tools:
Knife
Cutting board
Strainer
Round baking dish
Parchment
Pizza cutter
Small bowl and fork for egg wash
Medium size bowl for your berries
Ingredients:
1/2 pound washed cleaned strawberries
1/2 pint washed blueberries
Lemon thyme 1T.
4 peaches sliced thin
1/4c brown sugar
1/2 fresh lemon juiced
1 pre-made pie crust (or make your own fresh crust)
1 egg
pinch pink salt
Method:
Preheat oven to 375. Defrost your pie crust. Wash and pat dry your berries. Cut your strawberries,and peaches. I like to slice my peaches thin. When they are on the brink, they may be a little mushy, perfect for baking.
Add all fruit to the bowl and mix in the brown sugar, lemon juice, stir with your spatula to coat them all. I also added some fresh herbs I had and needed to use up. Lemon thyme, soooo mellow and aromatic, not thyme-y at all. If you haven’t tReid it, you should!
Unroll your pie crust, leaving enough to fold over your filling.
About 3 inches.
Egg wash the folded crust area and sprinkle with brown sugar.
Bake at 375 for 40 minutes.
