Blackberry Protein Parfait

Stunning contrast with colors of yellow and deep blue for this feel good goodie!

Tastes great with healthy benefits of blue spiralina, blackberries, cottage cheese.

Tools:

Food Processor or Blender
Measuring cups
Measuring spoons
Spatula
Zester
Knife- small pairing for carving out your lemons

Ingredients:

Organic Blackberries 1/3 cup, washed
Lemon zest 1/2 tsp.
Lemon juice 1/2 lemon
Maple Syrup (pure, not dark) 2 T.
Blue Spirilina Powder 1 tsp.
Cottage Cheese 1 cup
Fresh Rosemary for garnish (optional)

Method:

Scoop cottage cheese, into food processor with all ingredients but the blackberries and blend.

Add the blackberries and blend again this time until as smooth as possible. You may need to scrape the sides of the bowl and continue blending after that. When you blend enough the blackberry seeds break sown and are not very noticeable.

Using your spatula, scrape the blended cottage cheese mixture into a glass dish and freeze 3- 4 hours.

Hollow out your Lemons and freeze:
Cut the bottom of your lemon off to make sure it is flat & will stand on its own without rolling away! (Cut the top off your lemon so you are able to hollow it out & them use this piece for the “top” presentation piece for serving.)
Use the end you cut off and place it in the bottom of the hollowed out lemon for stability and covering any holes that may be there from cutting it off. Scoop the insides out of your lemons making sure to keep the shape of the lemon intact.
Freeze your lemons at the same time. I just lay them on a plate and don’t cover them.

Pull cartage cheese mixture out, scoop into your frozen lemons, I use rosemary for an additional garnish like the lemon “leaf”.

Pro-Tip: You can always blend the blackberries first before anything else and strain them back into the cottage cheese mixture if you don’t want any texture of seeds in you parfait.
