ChickPea Cucumber Salad

Yum! That’s what I should rename this salad, just YUM.

Everyone will love this fresh salad (minus the lettuce) its healthy and colorful and screams summer produce.  I suppose if you do not like vegetables you may not love this, but like I say to my clients…Just try it!  You may surprise yourself.  

For the Yummy vinaigrette look up “mediterranean red wine vinaigrette“

I did not include it because I have a couple different vinaigrettes I pair with this bowl of fresh goodness. That way you keep the simple food prep but change up the dish by swapping out vinaigrettes. Genius!!!!!

Tools:

cutting  board

knife

large bowl for mixing

spoon

can opener 

strainer

Ingredients:

1 can chickpeas 

1 jar pitted kalamata olives 

1 container cherry or grape tomatoes halved 

2 whole seedless cucumbers sliced ~pro tip: there are still seeds in “seedless” cukes, I remove most of those too

1 shallot sliced thin

Method:

Open and drain all jars and cans, sliced cucumbers, sliced tomatoes, and thinly sliced shallot 

Find vinaigrette recipe under “mediterranean red wine vinaigrette“

Using spoon mix all ingredients together. 

This one is definitely a keeper!
