Mediterranean Red Wine Vinaigrette

Great vinaigrette for chic pea cucumber salad.  So fun and colorful, perfect way to enjoy all the flavors that farmers markets give us. 

I toss this vinaigrette with cucumbers, chic peas, tomatoes, olives…I do have a recipe for this under “salads”

Tools:

small food processor or blender 

small spatula

glass jar for refrigerating vinaigrette

measuring cups and spoons

Ingredients:

1/3 c. red wine vinegar 

3/4 c. light olive oil

1-2 tsp. Z’atar dry seasoning

4-5 T. local honey (not wildflower, its to floral)

salt and pepper TT.

Method:

With your food processor or blender set up and ready to go, add you vinegar, honey, Z’atar, and blend.  Add olive oil.  Blend.  Taste. Add a pinch of salt and pepper.  Blend.  Taste. Adjust if needed. This vinaigrette tastes even better when it has time to marinate overnight, or its great just to have for your salads. So, Toss with veggies for a salad, or marinate chicken for a zesty protien for our next dinner. Or do both! Then chop the chicken up and add to your chic pea cucumber salad.
