Like all my sheet pan recipes this one is fast and simple. You can substitute other veggies if you are not into the ones I have chosen. I added Brussels sprouts to this recipe when I did it for Instagram but the original recipe does not have Brussels sprouts on it.

large bowl to toss chicken, herbs, veggie
4 T. Olive oil
1/2 large fresh lemon juice (optional)
2 pkgs or 16-18 pieces chicken tenders boneless skinless
1T. Thyme dry seasoning
Pro Tip: if using dry herbs 1 T. of each dry herbs are more potent
1 whole sliced sweet onion or red onion
6-8 slices of GOOD FETA cheese for serving (set aside)
1/2 head broccoli cut into large pieces
1/2 head cauliflower cut into large pieces
1 container bite size tomatoes
1/4 c. Pitted kalamata olives or green olives (whatever you like)
4T. Fresh garlic
15 brussles sprouts sliced in half (cut off ends of course)
Salt & Pepper TT.
Pre-heat oven to 400° convection 425° conventional.
Pro Tip: make sure your oven is pre–heated, this will ensure accurate cooking time
Line sheet tray with Parchment paper and set aside.
Boneless skinless tenders clean up any unwanted fat or cartilage. When cleaned rinse your chicken. And dry with paper towels and throw into large bowl.
Prep your sliced onions and ALL remaining veggies now.
Using 2T. of you olive oil, drizzle over raw chicken in bowl, season with salt, pepper, garlic powder, fresh lemon juice, & dry thyme. Toss in veggies and 2 more Tablespoons of olive oil.
Mix with your hands until all chicken and veggies are coated. Pour onto parchment covered sheet tray. Single layer ALWAYS! If you have chicken and veg laying onto of one another you won’t a browned look and some things may undercook. So maybe two sheet trays is best instead of one.
Pro Tip: make sure to scrape your bowl with a spatula to get all of the oil seasonings and flavor onto your chicken to bake.
Bake chicken and veg. for 22 minutes.
Pull out sheet tray(s) and flip each piece of chicken. Put back in …
Bake another 12 minutes.
Top with cheese for final 5-8 minutes
Pull out and let sit one minutes before serving.
